- 2 mandarin oranges, peeled and segmented, cut segments in half if preferred
- 2 firm but ripe kiwis, peeled and sliced
- 1 firm persimmon, diced
- 1/2 pomegranate, arils only
Instructions
- Make the dressing: Add the orange juice, honey, and poppy seeds to a small jam jar. Screw on the lid tightly and shake well until all ingredients are thoroughly combined. Set the dressing aside until ready to use.
- Assemble the salad: Place all the prepared fruit—including diced apples, pears, orange fillets, mandarin segments, kiwi slices, diced persimmon, and pomegranate arils—into a large bowl or arrange them on a platter if preferred. Pour the dressing over the fruit and gently toss to coat evenly. Serve immediately for the best freshness.
- Make ahead tips: If preparing the salad in advance, toss the diced apples and pears with a little lemon juice immediately after cutting to prevent browning.
