Description

Delight in these delicious European-inspired waffles filled with a creamy custard and topped with a silky chocolate glaze. Perfect as a decadent dessert or sweet treat, this recipe combines fluffy waffles with a rich custard filling and a luscious chocolate coating for an irresistible indulgence.

Ingredients

Scale

For the Waffles:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1¾ cups milk
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

For the Filling (Custard or Cream):

  • 1 cup whole milk
  • 2 tablespoons cornstarch
  • 1/4 cup sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • pinch of salt

For the Chocolate Glaze:

  • 1/2 cup heavy cream
  • 4 oz semi-sweet chocolate, chopped
  • 1 tablespoon butter

Instructions

  1. Prepare the Waffles: Preheat your waffle iron. In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk the eggs, milk, oil or melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir just until combined, avoiding overmixing. Cook the batter in the preheated waffle iron per the manufacturer’s guidelines until golden brown. Transfer the waffles to a cooling rack to cool slightly.
  2. Make the Custard Filling: In a saucepan, whisk together the milk, cornstarch, sugar, egg yolk, and salt. Cook over medium heat while whisking constantly until the mixture thickens, about 5 to 7 minutes. Remove from heat and stir in the vanilla extract. Allow the custard to cool completely before use to ensure proper set and texture.
  3. Prepare the Chocolate Glaze: Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chopped semi-sweet chocolate and let it sit for one minute. Stir gently until the chocolate melts and the mixture is smooth. Mix in the butter to add shine and richness to the glaze.
  4. Assemble the Waffles: Spread or pipe the cooled custard filling evenly between two waffle halves to create a sandwich. Dip the top of the assembled waffle sandwiches into the warm chocolate glaze or drizzle it generously over the top. Serve immediately for the best texture and flavor, or chill slightly to allow the glaze to set.

Notes

  • For convenience, use store-bought pastry cream or pudding as the filling to speed up preparation.
  • You can freeze the waffles and reheat them before assembling for make-ahead ease.
  • To add a mocha flavor, try adding a pinch of espresso powder to the chocolate glaze.
