Description

This Veggie Pita Bread Pizza is a quick and healthy Mediterranean-inspired vegetarian dish perfect for a light dinner or lunch. Using whole wheat pita breads as the base, it features a vibrant mix of fresh vegetables layered with tomato sauce and melted mozzarella cheese, all baked to bubbly, golden perfection.

Ingredients

Scale

Base and Sauce

  • 4 whole wheat pita breads
  • 1 cup pizza sauce or marinara sauce

Cheese

  • 1 ½ cups shredded mozzarella cheese

Vegetables

  • ½ red bell pepper, thinly sliced
  • ½ green bell pepper, thinly sliced
  • ½ red onion, thinly sliced
  • ½ cup sliced mushrooms
  • ¼ cup black olives, sliced
  • ½ cup baby spinach leaves

Seasoning and Extras

  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray or drizzle (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking.
  2. Prepare Pita Bases: Place the whole wheat pita breads on the prepared baking sheet, ensuring they are spaced evenly to allow crisping and even cooking.
  3. Add Sauce: Spread about ¼ cup of pizza sauce evenly over each pita bread, leaving a small border around the edges to prevent overflow and provide structure.
  4. Add Cheese: Sprinkle shredded mozzarella cheese generously over the sauce, creating a melty, flavorful layer that binds the toppings.
  5. Layer Vegetables: Evenly distribute the thinly sliced red and green bell peppers, red onion, mushrooms, black olives, and baby spinach over the cheese on each pita.
  6. Season: Sprinkle Italian seasoning over the assembled vegetables and lightly season with salt and pepper according to your taste preferences.
  7. Optional Olive Oil: For extra crispiness, lightly drizzle olive oil or use an olive oil spray over the toppings.
  8. Bake: Place the baking sheet in the oven and bake for 10 to 12 minutes until the cheese is melted, bubbly and the edges of the pita breads are golden brown and crisp.
  9. Cool and Serve: Remove from the oven and allow to cool for 2 minutes before slicing. Serve warm and enjoy your easy, tasty veggie pita pizzas.

Notes

  • Customize this recipe by adding your favorite vegetables or crumbled feta or goat cheese for an extra flavor dimension.
  • For a crisper pita base, bake the pita breads plain for 2–3 minutes before adding toppings.
  • This recipe works well with gluten-free pita or flatbread as a substitute for whole wheat pita.
