Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 cup granulated sugar
Wet Ingredients
- 1 stick (1/2 cup) unsalted butter, softened
- 1 large egg
Filling and Topping
- 1/2 cup raspberry jam
- 1 cup dark chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to ensure the cookies don’t stick and bake evenly.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, and sugar until well combined, creating a uniform dry mix.
- Cream Butter and Egg: In a large bowl, cream the softened butter until fluffy to incorporate air, then beat in the egg until the mixture is smooth and creamy.
- Combine Dry and Wet: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined, being careful not to overmix for tender cookies.
- Add Raspberry Jam: Spoon about 1 teaspoon of raspberry jam into each cookie ball before placing them on the parchment-lined baking sheet to create a gooey center.
- Bake Cookies: Bake for about 10 minutes, or until the cookies are slightly puffy but still soft in the middle, then remove from the oven and allow them to cool on a wire rack.
- Prepare Ganache: While the cookies cool, heat the heavy cream and dark chocolate chips together in a small saucepan over low heat, stirring continuously until the chocolate melts and the mixture is smooth.
- Drizzle Ganache: Drizzle the warm ganache over the cooled cookies to add a rich chocolate topping that complements the raspberry filling perfectly.
Notes
- Make sure the butter is softened to room temperature for proper creaming.
- Do not overbake; the cookies should stay soft in the center.
- Use high-quality dark chocolate chips for a richer ganache flavor.
- Allow the ganache to cool slightly before drizzling so it thickens slightly and coats the cookies nicely.
- Store cookies in an airtight container for up to 3 days to maintain freshness.
