Description

These Triple Almond Cookies are a delightful treat bursting with almond flavor. Soft and chewy with crunchy almonds and sweet white chocolate, they are perfect for any occasion.

  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped toasted almonds
  • 1/2 cup almond flour
  • 3/4 cup white chocolate chips or chunks (optional)


Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Extracts: Add eggs one at a time, then mix in the vanilla and almond extracts.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and almond flour.
  5. Mix Wet and Dry Ingredients: Gradually add dry ingredients to wet, mixing until just combined.
  6. Add Almonds and Chocolate: Fold in chopped almonds and white chocolate chips if using.
  7. Bake: Scoop dough onto baking sheets, bake for 10–12 minutes until edges are golden.
  8. Cool: Let cookies cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
