Cookies:

- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped toasted almonds
- 1/2 cup almond flour
- 3/4 cup white chocolate chips or chunks (optional)
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs and Extracts: Add eggs one at a time, then mix in the vanilla and almond extracts.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and almond flour.
- Mix Wet and Dry Ingredients: Gradually add dry ingredients to wet, mixing until just combined.
- Add Almonds and Chocolate: Fold in chopped almonds and white chocolate chips if using.
- Bake: Scoop dough onto baking sheets, bake for 10–12 minutes until edges are golden.
- Cool: Let cookies cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
Notes
