For the Sloppy Joe Mixture:
- 1 tablespoon olive oil
- 1 pound ground beef
- ½ cup finely diced onion
- ½ cup finely diced red bell pepper
- 2 cloves garlic (minced)
- ¾ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- ½ teaspoon smoked paprika
- Salt and pepper to taste
For the Nachos:
- 1 bag (10 oz) tortilla chips
- 1½ cups shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ¼ cup sliced green onions
- ¼ cup pickled jalapeños (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Cook the beef: In a skillet, cook ground beef until browned. Add onion, bell pepper, and garlic, then stir in ketchup, brown sugar, mustard, Worcestershire sauce, paprika, salt, and pepper. Simmer.
- Assemble the nachos: Spread tortilla chips on a baking sheet, top with sloppy joe mixture and cheeses.
- Bake: Bake for 8-10 minutes until cheese is melted.
- Finish and serve: Top with green onions and jalapeños. Serve warm.
Notes
- Add a drizzle of sour cream or ranch for a creamy finish.
- For a spicier version, stir hot sauce into the sloppy joe mixture or use pepper jack cheese.
