Description

For the Sloppy Joe Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • ½ cup finely diced onion
  • ½ cup finely diced red bell pepper
  • 2 cloves garlic (minced)
  • ¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

For the Nachos:

  • 1 bag (10 oz) tortilla chips
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ¼ cup sliced green onions
  • ¼ cup pickled jalapeños (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook the beef: In a skillet, cook ground beef until browned. Add onion, bell pepper, and garlic, then stir in ketchup, brown sugar, mustard, Worcestershire sauce, paprika, salt, and pepper. Simmer.
  3. Assemble the nachos: Spread tortilla chips on a baking sheet, top with sloppy joe mixture and cheeses.
  4. Bake: Bake for 8-10 minutes until cheese is melted.
  5. Finish and serve: Top with green onions and jalapeños. Serve warm.
