Description

Indulge in a delightful fusion of sweet and savory with these Strawberry Cheesecake Quesadillas. Creamy cheesecake filling paired with fresh strawberries, all folded in a crispy tortilla – a dessert that’s as fun to make as it is to eat.

Ingredients

Scale

For the Cheesecake Filling:

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

For the Quesadillas:

  • 4 large flour tortillas
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsalted butter (for cooking)
  • Optional toppings: whipped cream, extra strawberries, or a drizzle of chocolate or strawberry sauce

Instructions

  1. Prepare the Cheesecake Filling: In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Prepare the Strawberries: In another bowl, toss the sliced strawberries with granulated sugar and set aside to macerate.
  3. Assemble the Quesadillas: Spread the cream cheese mixture on half of each tortilla. Spoon sugared strawberries over the cream cheese, then fold the tortillas in half.
  4. Cook the Quesadillas: Melt butter in a skillet. Cook each quesadilla for 2–3 minutes per side until golden and crispy.
  5. Serve: Let cool slightly, slice into wedges, and serve warm with optional toppings.

Notes

  • For extra indulgence, try adding mini chocolate chips before folding.
  • Experiment with different berries or fruit jams for a flavor twist.
