Instructions
- Prepare the Cheesecake Filling: In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Prepare the Strawberries: In another bowl, toss the sliced strawberries with granulated sugar and set aside to macerate.
- Assemble the Quesadillas: Spread the cream cheese mixture on half of each tortilla. Spoon sugared strawberries over the cream cheese, then fold the tortillas in half.
- Cook the Quesadillas: Melt butter in a skillet. Cook each quesadilla for 2–3 minutes per side until golden and crispy.
