- Prepare Matcha Mixture: In a bowl, sift the matcha powder to remove lumps. Mix it with 2 tablespoons of sugar and gradually whisk in 2 tablespoons of hot water until you get a smooth, lump-free matcha paste.
- Whip Cream and Mascarpone: In a separate bowl, whip the chilled heavy cream until soft peaks form. Gently fold in the mascarpone cheese along with the remaining sugar until the mixture is smooth and combined.
- Combine Matcha and Cream Mixtures: Incorporate the prepared matcha paste and vanilla extract into the mascarpone cream mixture by folding gently until smooth and evenly colored.
- Layer Ladyfingers: Quickly dip each ladyfinger into the cooled espresso—making sure not to soak them for too long to avoid sogginess—and arrange a layer in your serving dish.
- Assemble First Layer: Spread half of the matcha mascarpone cream evenly over the espresso-soaked ladyfingers.
- Repeat Layers: Add another layer of dipped ladyfingers and cover with the remaining matcha mascarpone cream.
