Description

Celebrate St. Patrick’s Day with these festive and easy Cake Mix Cookies. Made with a white cake mix and tinted with green gel food coloring, these cookies are soft and tender with a delightful coating of melted chocolate and colorful sprinkles for a charming holiday treat.

Ingredients

Scale

Cookie Dough

  • 13.25 oz white cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Green gel food coloring, to desired shade

Coating and Decoration

  • 12 oz meltable chocolate (almond bark or white chocolate chips)
  • Gold and green sprinkles

Instructions

  1. Prep the Baking Sheet: Line a cookie sheet with parchment paper and set aside to ensure cookies do not stick during baking.
  2. Mix the Dough: In a large bowl, combine the white cake mix, vegetable oil, eggs, vanilla extract, and green gel food coloring. Use a hand mixer or paddle attachment to mix thoroughly until the dough is smooth and well combined.
  3. Chill the Dough: Cover the dough and refrigerate for 30 minutes. This helps the dough firm up for easier handling and better cookie shape.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking.
  5. Form Cookie Dough Balls: Scoop 1-inch diameter balls from the chilled dough and place them on the prepared baking sheet spaced about 2 inches apart to allow room for spreading.
  6. Bake: Bake in the preheated oven for 8-10 minutes or until the bottoms of the cookies turn golden brown. Be careful not to overbake to keep cookies soft.
  7. Cool the Cookies: Remove from the oven and transfer cookies to a wire rack to cool completely before decorating.
  8. Melt the Coating: Melt the almond bark or white chocolate chips in the microwave by heating in 30-second intervals, stirring between each until smooth and fully melted.
  9. Dip and Decorate: Dip each cooled cookie into the melted coating, then immediately sprinkle with gold or green colored sprinkles for a festive look.
  10. Set and Serve: Allow the coating to harden at room temperature or place the cookies in the refrigerator for 5 minutes to speed up the setting process. Serve and enjoy your St. Patrick’s Day treat!

Notes

  • Be cautious not to overbake the cookies to retain their soft texture.
  • You can adjust the amount of green food coloring to get your preferred shade of green.
  • For a different flavor, substitute the vanilla with almond extract.
  • Store cookies in an airtight container at room temperature for up to 3 days.
