  • Salt & pepper, to taste


Instructions

  1. Prep Sweet Potatoes and Onion: Peel and cut the sweet potatoes into 1/2 inch pieces, and chop half an onion. This prep work ensures even cooking and a balanced flavor base.
  2. Sauté Onion: Heat 1 tablespoon of olive oil in a pot over medium-high heat. Add the chopped onion and sauté for 5-7 minutes until it starts to turn lightly browned, which develops a rich, savory flavor foundation.
  3. Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, releasing its aromatic oils without burning.
  4. Add Liquids and Seasonings: Pour in 4 cups of vegetable broth and 2 cups of water. Add the chipotle chili pepper, 1 tablespoon of adobo sauce, tomato paste, and the sweet potatoes. Bring the mixture to a boil over high heat, then reduce to medium and cover with the lid slightly ajar. Simmer for 15 minutes, or until sweet potatoes are very tender, absorbing the smoky and spicy flavors.
