  • 3 bird’s eye chillis, sliced (adjust amount to taste)
  • 2 cloves garlic, minced

Egg Mixture

  • 6 eggs
  • 1 tbsp milk
  • 3/4 tsp salt
  • Black pepper, to taste

Other Ingredients

  • 1/2 tbsp olive oil
  • 1 tbsp butter
  • 3/4 cup grated cheese (cheddar or any meltable, flavorful cheese)
  • 1/4 cup fresh basil leaves, thinly sliced (or substitute 1 tbsp dried Italian herbs)
  • 8 small tortillas (corn or flour, about 6″ / 12 cm rounds)
  • Olive oil, for brushing (optional)


Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F). Prepare a baking tray by spraying it with oil or lining it with parchment or baking paper to prevent sticking.
  2. Prepare the Sausage: Remove the casings from the spicy Italian sausages so you have loose sausage meat ready for cooking.
  3. Cook the Sausage: Heat olive oil in a large fry pan over high heat. Add the sausage meat and cook, breaking it up into chunky pieces with a spatula, until nicely browned. Once cooked, remove the sausage from the pan and set aside.
  4. Sauté Vegetables and Aromatics: Reduce the heat to medium-high. In the same pan (do not clean it), melt the butter. Add the diced onion, sliced bird’s eye chillis, and minced garlic. Sauté for 3 to 5 minutes until the onion becomes translucent and light golden brown.
  5. Scramble the Eggs: Add the eggs, milk, salt, and black pepper to the pan. Stir slowly with a wooden spoon, not vigorously, until the eggs begin to hold together but remain slightly wet, about 5 minutes. This will give a creamy texture.
  6. Combine Filling: Remove the pan from heat. Stir in the cooked sausage, grated cheese, and thinly sliced fresh basil leaves until well combined.
  7. Assemble the Roll Ups: Divide the filling evenly among the 8 tortillas. Place the filling near one edge and roll each tortilla tightly, sealing the seam on the bottom.
  8. Bake the Roll Ups: Arrange the rolled tortillas seam side down on the prepared baking tray. Optionally, brush the tops lightly with olive oil for extra crispness. Bake in the preheated oven for 15 to 20 minutes or until they turn light golden and slightly crisp.
