Instructions

  1. Combine Ingredients: In a large skillet, combine the uncooked rice, salsa, peeled and diced sweet potatoes, rinsed and drained black beans, undrained diced green chiles, chili powder, and chicken or vegetable broth. Stir gently to mix all ingredients evenly.
  2. Cook the Mixture: Cover the skillet and bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer, covered, for 15 minutes, allowing the rice and sweet potatoes to cook thoroughly and absorb flavors.
  3. Rest and Fluff: After simmering, remove the skillet from the heat and keep it covered. Let it rest for 5 minutes to finish cooking and settle. Then, uncover and fluff the rice mixture gently with a fork. Stir in the fresh lime juice and sliced green onions.
