Description

These Soft and Cheesy Breakfast Rolls combine fluffy scrambled eggs, melted cheddar and mozzarella cheeses, and a touch of green onions, all wrapped in buttery crescent dough. Perfect for a warm and satisfying breakfast treat, these rolls are easy to prepare and bake to golden perfection in just 20 minutes.

Ingredients

Scale

Dough

  • 1 tube crescent dough sheet (or crescent rolls, seams pressed together)

Filling

  • 6 large eggs, scrambled
  • ½ cup shredded cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped green onions (optional)

For Serving

  • 1 tbsp melted butter (for brushing)

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C) and grease a baking dish or sheet to prevent sticking and ensure easy removal of the rolls.
  2. Prepare the Dough: Unroll the crescent dough sheet onto a floured surface. Smooth it into a rectangle shape and press seams firmly to seal any gaps, creating a solid base for the filling.
  3. Cook the Eggs: In a skillet over medium heat, scramble the eggs seasoned with salt and black pepper. Cook until just set but still moist, avoiding overcooking for the best texture.
  4. Layer the Fillings: Spread the scrambled eggs evenly over the prepared dough. Sprinkle shredded cheddar, mozzarella cheeses, and chopped green onions evenly on top of the eggs for a flavorful balance.
  5. Roll and Slice: Starting from the long side, roll the dough and filling tightly into a log shape. Slice the log into 8–10 even rolls for individual servings.
  6. Bake: Arrange the rolls cut-side up in the greased baking dish or sheet. Bake for 18 to 22 minutes until the rolls are puffed and golden brown, indicating they are cooked through and bubbly.
  7. Butter and Serve: Remove the rolls from the oven and immediately brush with melted butter for a rich, glossy finish. Let them cool slightly before serving warm to enjoy the melty cheese and soft texture.

Notes

  • You can substitute the crescent dough with puff pastry if preferred, but adjust baking time accordingly.
  • Green onions are optional but add a fresh flavor and a pop of color.
  • Serve these rolls warm with a side of fresh fruit or your favorite breakfast sides.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven for best texture.
