Olive Oil:

Crispy Lentils:
- 1 cup cooked lentils (drained and patted dry)
Lasagna Sauce:
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon red pepper flakes (optional)
- 1 teaspoon dried oregano
- 1 (14 oz) can crushed tomatoes
- ½ cup tomato sauce
- ½ cup water or vegetable broth
Lasagna:
- 6–8 no-boil lasagna noodles (broken into pieces)
- ½ teaspoon salt
- black pepper to taste
- ¾ cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- fresh basil or parsley for garnish
Instructions
- Crispy Lentils: Heat 1 tbsp olive oil in a skillet, sauté lentils until crispy, set aside.
- Lasagna Sauce: In the same skillet, cook onion, add garlic, spices, tomatoes, sauce, broth, salt, pepper. Add lasagna noodles, simmer covered for 15 mins.
- Finish: Drop ricotta over lasagna, sprinkle with cheeses. Broil until bubbly. Top with crispy lentils and herbs. Let rest before serving.

- Use green or brown lentils for best texture.
- Enhance smoky flavor with liquid smoke if desired.
