Ingredients
Scale
Sausage and Potatoes
- 1 lb smoked sausage, sliced into 1/2-inch pieces
- 1½ lbs baby potatoes, halved or quartered
- 2 tbsp olive oil
Vegetables and Seasonings
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 bell pepper, sliced (any color)
- 1 cup fresh spinach (optional)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prep & Sear: Heat 1 tbsp olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned and lightly crisped, about 5–6 minutes. Remove the sausage from the skillet and set aside to keep the flavors and juices.
- Cook the Potatoes: In the same skillet, add the remaining 1 tbsp olive oil along with the halved or quartered baby potatoes. Season with salt and black pepper. Cook the potatoes for 10–12 minutes, stirring occasionally to ensure they turn golden and become tender throughout.
- Add Veggies & Spice: Add the diced onion, minced garlic, and sliced bell pepper to the skillet with the potatoes. Sprinkle in the smoked paprika and Italian seasoning. Sauté everything together for 3–4 minutes until the vegetables soften and the spices become fragrant.
- Bring it Together: Return the browned sausage to the skillet and mix it in. Add the fresh spinach if using, and cook for another 1–2 minutes until the spinach wilts and the entire dish is heated through.
- Serve: Sprinkle the freshly chopped parsley over the skillet for a burst of color and freshness. Serve the Smoky Sausage & Potatoes hot straight from the pan, enjoying the comforting blend of smoky sausage, tender potatoes, and vibrant vegetables.
Notes
- Use smoked sausage for the best smoky flavor, but you can substitute with kielbasa or any smoked pork sausage.
- Baby potatoes work well because they cook evenly and quickly; regular potatoes can be cut smaller.
- Fresh spinach is optional but adds great color and nutrients.
- Adjust seasoning to taste, especially salt and smoked paprika levels.
- For extra crispiness, let the potatoes cook undisturbed for a few minutes between stirs.
- This recipe is a flexible base—feel free to add mushrooms or substitute bell peppers with other veggies like zucchini.
