For the Dip:

  • 1 lb ground beef
  • 1 tablespoon taco seasoning
  • 1/2 cup diced onion
  • 1 (8 oz) block cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 1 (10 oz) can diced tomatoes with green chiles, drained
  • 1/2 cup chopped green onions
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped cilantro (optional)
  • Tortilla chips for serving


Instructions

  1. Preheat the Smoker: Preheat your smoker to 250°F.
  2. Cook the Beef: In a skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease and stir in the taco seasoning.
  3. Prepare the Dip: In a large mixing bowl, combine cream cheese, sour cream, and mayonnaise until smooth. Add the cooked beef mixture, diced tomatoes, shredded cheeses, and half of the green onions.
  4. Smoke the Dip: Transfer the mixture to a cast iron skillet or baking dish. Smoke uncovered for 1 to 1.5 hours until hot and bubbly with a smoky crust on top.
  5. Final Touches: Remove from the smoker and top with remaining green onions, black olives, and cilantro. Serve hot with tortilla chips.

Notes

  • Add a dash of hot sauce or jalapeños for extra heat.
  • This dip can also be baked at 350°F for 25–30 minutes if a smoker isn’t available.
