Chuck Roast:
- 3–4 lb chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Au Jus:
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 4 cups beef broth (low sodium)
- 1 large onion (sliced)
- 4 cloves garlic (smashed)
Additional:
- 6 hoagie rolls or French sandwich buns
- 6 slices provolone or Swiss cheese
- 2 tablespoons butter (optional, for toasting buns)
Instructions
- Season and Sear: Season chuck roast with salt, pepper, garlic powder, and onion powder. Sear in a skillet.
- Cook in Slow Cooker: Transfer roast to slow cooker, add seasonings, broth, onion, and garlic. Cook until tender.
- Shred Beef: Remove roast, shred meat. Strain cooking liquid for au jus.
- Assemble Sandwiches: Toast rolls, pile on beef, top with cheese, melt under broiler. Serve with au jus.
Notes
- Enhance flavor with a splash of red wine.
- Optional: Serve with sautéed mushrooms or peppers.
- Leftovers can be used for quesadillas or nachos.
