Ingredients
Scale
Chicken and Vegetables
- 1 pound chicken breast tenders
- 1 red onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
Spices and Oil
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- Kosher salt, to taste
- Fresh cracked black pepper, to taste
Garnish
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the chicken and vegetables evenly.
- Prepare and Combine Ingredients: On a large baking sheet, place the chicken breast tenders, sliced red onion, and sliced green, red, and yellow bell peppers. Drizzle the mixture with olive oil.
- Season the Mixture: Sprinkle the chili powder, cumin, garlic powder, paprika, dried oregano, onion powder, kosher salt, and fresh cracked pepper over the chicken and vegetables. Toss everything well so that the spices coat all the pieces evenly.
- Bake: Place the baking sheet in the preheated oven and bake for 10 minutes. After 10 minutes, stir the mixture to redistribute and expose all sides, then return to the oven for an additional 5 minutes.
- Broil for Crispiness: Switch your oven to broil on high. Broil the fajitas for 2 to 3 minutes or until the edges of the chicken and peppers become crispy and slightly charred for extra flavor.
- Serve: Remove from the oven and garnish with fresh chopped parsley. Serve hot with your favorite toppings such as sliced avocado, salsa, sour cream, or warm tortillas for a complete meal.
Notes
- Make sure to slice the vegetables uniformly for even cooking.
- Adjust the spice levels according to your taste preference.
- If you prefer, use chicken thighs for a juicier result.
- The broiling step enhances crispiness but watch carefully to avoid burning.
- Serve with warm tortillas, guacamole, salsa, or sour cream for traditional fajita accompaniments.
