  • 1 tablespoon olive oil
  • 1 pound smoked kielbasa, sliced into rounds
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14 ounces) diced tomatoes
  • 2 cups drained sauerkraut
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until lightly browned, about 5 minutes. Remove and set aside.
  2. Add the onion, carrots, and celery to the pot and sauté until softened, about 6 minutes. Stir in the garlic and cook for 1 minute more.
  3. Return the kielbasa to the pot, then add the chicken broth, diced tomatoes, sauerkraut, potatoes, caraway seeds, paprika, pepper, salt, and bay leaves. Bring to a boil, then reduce heat to low and simmer for 30 minutes, until the potatoes are tender and the flavors meld.
  4. Remove the bay leaves, adjust seasoning as needed, and stir in the fresh parsley before serving hot.

Notes

  • For a richer flavor, use beef broth instead of chicken broth.
  • You can make this soup ahead of time—it tastes even better the next day as the flavors develop.
  • Serve with crusty bread for a hearty meal.
