Crust
- 1 package refrigerated pie crusts (2 sheets)
Filling
- 4 large eggs (divided)
- 1/2 cup cooked bacon or breakfast sausage (crumbled)
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked spinach (squeezed dry and chopped)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Egg Wash
- 1 tablespoon milk or cream
- 1 large egg (from the 4 eggs divided)
Optional Garnish
- Hot sauce or herbs (for garnish)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and for easy clean-up.
- Prepare Pie Crust: On a floured surface, slightly roll out the refrigerated pie crusts and cut each sheet into 4 equal rectangles, giving you 8 pieces total.
- Cook Scrambled Eggs: In a small bowl, whisk together 3 of the eggs. Pour into a nonstick skillet over medium heat and scramble until just cooked through. Remove from heat and allow to cool slightly.
- Mix Filling: In a mixing bowl, combine the cooled scrambled eggs, crumbled bacon or sausage, shredded cheddar cheese, chopped spinach, salt, and black pepper. Mix gently to combine all ingredients evenly.
- Assemble Pop-Tarts: Place 4 of the pie crust rectangles on the prepared baking sheet. Spoon the filling evenly onto each crust, leaving a small border around the edges to help seal.
- Seal Pop-Tarts: Top each filled rectangle with one of the remaining 4 crust rectangles. Press the edges together using a fork to seal tightly and prevent filling from leaking during baking.
- Apply Egg Wash: Whisk the remaining egg with the milk or cream. Brush this egg wash over the top of each pop-tart to help achieve a golden brown finish.
- Vent Pop-Tarts: Use a sharp knife to cut a small vent or slit on the top of each pop-tart. This allows steam to escape while baking.
- Bake: Bake the pop-tarts in the preheated oven for 20 to 25 minutes or until they are golden brown and cooked through.
- Cool and Serve: Allow the pop-tarts to cool slightly on a wire rack before serving. Optionally, garnish with hot sauce or fresh herbs if desired.
