  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 1 tablespoon milk or cream
  • 1 large egg (from the 4 eggs divided)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and for easy clean-up.
  2. Prepare Pie Crust: On a floured surface, slightly roll out the refrigerated pie crusts and cut each sheet into 4 equal rectangles, giving you 8 pieces total.
  3. Cook Scrambled Eggs: In a small bowl, whisk together 3 of the eggs. Pour into a nonstick skillet over medium heat and scramble until just cooked through. Remove from heat and allow to cool slightly.
  4. Mix Filling: In a mixing bowl, combine the cooled scrambled eggs, crumbled bacon or sausage, shredded cheddar cheese, chopped spinach, salt, and black pepper. Mix gently to combine all ingredients evenly.
  5. Assemble Pop-Tarts: Place 4 of the pie crust rectangles on the prepared baking sheet. Spoon the filling evenly onto each crust, leaving a small border around the edges to help seal.
