- 3 cups baby potatoes, halved or quartered
- 2 cups broccoli florets
- 1 small onion, diced
- 2 cloves garlic, minced

- 1/2 teaspoon dried oregano

- 1/4 cup water
Instructions
- Brown the Sausage: In a large skillet over medium heat, add 1 tablespoon of olive oil and the sliced sausage. Cook for 4–5 minutes until browned, then remove the sausage from the skillet and set aside.
- Sauté Onions and Potatoes: Add the remaining tablespoon of olive oil to the skillet followed by diced onion and baby potatoes. Season with smoked paprika, dried oregano, salt, and black pepper. Sauté the mixture for 5 minutes, stirring occasionally.
- Steam Potatoes: Pour in 1/4 cup of water, cover the skillet, and let the potatoes steam for 8–10 minutes or until they are fork-tender.
- Cook Broccoli: Remove the lid and add the broccoli florets to the skillet. Cook uncovered for another 5 minutes, stirring occasionally, until the broccoli is crisp-tender.
- Combine and Finish: Return the browned sausage to the skillet. Add the minced garlic and cook everything together for an additional 2–3 minutes to let the flavors meld. Adjust the seasoning with salt and pepper to taste.
- Serve: Serve the skillet hot, optionally garnished with shredded cheese or a drizzle of lemon juice for extra flavor.
