Instructions
- Make the caramel: Place the granulated sugar in a medium saucepan over medium heat. Stir constantly as the sugar melts, clumps, then turns into a smooth amber liquid. Once fully melted, carefully add the butter and stir until melted. Slowly pour in the ½ cup heavy cream, stirring constantly as it bubbles vigorously. Continue cooking and stirring until the mixture is smooth and thickened slightly. Remove from heat and stir in fine sea salt. Let the caramel cool to room temperature.
- Prepare the ganache: Heat â…“ cup heavy cream until just simmering. Pour it over the chopped semi-sweet and milk chocolate in a bowl. Let sit for 2 minutes, then stir the mixture until smooth.
