Description

This elegant Salmon with Blueberries recipe combines tender oven-baked salmon fillet topped with a luscious blueberry sauce infused with white wine, vinegar, cinnamon, and honey. Served over fresh mixed greens, it makes a delightful and healthy meal perfect for any occasion.

Ingredients

Scale

Salmon

  • 10-ounce salmon fillet
  • Salt, to taste

Blueberry Sauce

  • 1/2 medium yellow onion, diced
  • 1 cup white wine
  • 1 1/2 tablespoons white wine vinegar
  • 1 cinnamon stick
  • 1 cup blueberries
  • 2 tablespoons butter
  • 1 tablespoon honey

Salad

  • 4 cups mixed greens

Instructions

  1. Prepare the Salmon: Remove salmon from the refrigerator and sprinkle with salt evenly on all sides. Preheat your oven to 400°F (200°C).
  2. Simmer the Wine and Onion Mixture: In a medium pot, combine diced onion, white wine, white wine vinegar, and cinnamon stick. Bring the mixture to a gentle simmer over low heat and cook for 10 minutes, allowing most of the liquid to evaporate and concentrate the flavors.
  3. Add Blueberries and Flavorings: Add blueberries, butter, and honey to the pot. Continue cooking for 3 to 5 minutes until the blueberries soften and turn a dark pink color, creating a rich and flavorful sauce.
  4. Bake the Salmon: Place the salmon fillet in a baking dish and spoon the blueberry sauce on top, covering the fish. Bake in the preheated oven for 8 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Plate the Dish: Arrange the mixed greens on a large serving plate. Drizzle a few tablespoons of the blueberry sauce over the greens, then carefully place the baked salmon and some of the cooked blueberries on top.
  6. Serve Immediately: Serve the salmon with blueberry sauce immediately while warm for the best flavor and texture.

Notes

  • For best results, use fresh wild-caught salmon if available.
  • You can substitute white wine with a dry vermouth or non-alcoholic white grape juice if preferred.
  • Adjust the honey amount to suit your desired sweetness level.
  • This dish pairs wonderfully with a light, crisp white wine such as Sauvignon Blanc.
  • Ensure the oven is fully preheated before baking the salmon to get an even cook.
