Ingredients
Scale
Squash
- 2 medium delicata squash, halved lengthwise and seeds removed
Seasoning
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 tablespoon maple syrup (optional)
Garnish
- Chopped fresh parsley (optional)
Instructions
- Preheat Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for roasting.
- Slice Squash: Cut the delicata squash into 1/2-inch thick half-moons, keeping the skin on since it becomes tender when roasted, and remove the seeds.
- Toss with Seasonings: Place the squash slices in a large bowl and toss them with olive oil, sea salt, black pepper, garlic powder, smoked paprika, and maple syrup if using, ensuring even coating.
- Arrange on Baking Sheet: Spread the seasoned squash slices in a single layer on the prepared baking sheet for even cooking.
- Roast: Roast the squash in the preheated oven for 20 to 25 minutes, flipping the slices halfway through to achieve golden brown edges and tender texture.
- Garnish and Serve: Remove from oven and optionally sprinkle with fresh chopped parsley. Serve warm as a side dish or enjoy them on salads or grain bowls.
Notes
- No need to peel delicata squash—the skin is edible and tender once roasted.
- For added texture, sprinkle pumpkin seeds over the squash before roasting.
- Customize the flavor by adjusting seasoning or adding a pinch of cayenne pepper for some heat.
