Salad Ingredients
- 1 head romaine lettuce
- 1/4 large red onion, sliced thin
- 4 ounces goat cheese, crumbled
- 6 ounces fresh raspberries (more to taste)
- 2 sliced avocados (more to taste)
- 1 lemon (for preserving avocado, optional)
- Freshly cracked pepper, to taste
- Salt, to taste
Dressing
- Poppyseed dressing, about 1/3 to 1/2 cup (or to taste)
Instructions
- Prepare the lettuce: Wash, chop, and thoroughly dry the romaine lettuce using a salad spinner for best results. Place the prepared lettuce into a large serving bowl.
- Slice the onion: Slice the red onion as thinly as possible, adjusting quantity to your preference, and add it to the bowl.
- Add berries and cheese: Add the sliced red onions, crumbled goat cheese, and fresh raspberries to the bowl. Toss the salad gently to mix the ingredients without bruising the berries.
- Add the avocados: Slice the avocados and arrange them on top of the salad. If there will be any delay before serving, squeeze fresh lemon juice over the avocado slices to slow browning.
- Season the salad: Sprinkle freshly cracked black pepper and a pinch of salt over the salad, especially on the avocados, to enhance the flavors.
- Add dressing: Serve the salad with poppyseed dressing on the side or pour approximately 1/3 to 1/2 cup of dressing into the salad bowl and toss gently to coat all ingredients evenly.
- Serving suggestion: This salad pairs wonderfully with Simply Amazing Grilled Chicken Marinade and complements dishes like Best Potato Salad for a delightful summer meal.
Notes
- Use a salad spinner to ensure the lettuce is dry for a crisp salad.
- Lemon juice prevents avocado from browning if the salad must sit before serving.
- Adjust raspberry and avocado quantities according to taste preferences.
- You can serve the dressing on the side if desired to keep the salad fresh until served.
- Adding fresh cracked pepper and salt just before serving optimizes flavor.
- This salad is best consumed fresh.
