Instructions
- Preheat the oven: Set your oven to 400°F (204°C) and line a baking sheet with parchment paper or foil to prevent sticking and for easy cleanup.
- Prepare the kielbasa slices: Slice the kielbasa into 1/2-inch thick pieces. Carefully make 3–4 shallow cuts across the top of each slice without cutting all the way through, creating a hasselback effect which allows the glaze and pineapple to penetrate.
- Insert pineapple chunks: Place the kielbasa slices cut-side up on the prepared baking sheet. Tuck a small chunk of pineapple into each of the slits, distributing the sweetness evenly.
- Make the glaze: In a small bowl, whisk together barbecue sauce, honey, Dijon mustard, soy sauce, and garlic powder until smooth and well combined.
- Glaze the bites: Brush the glaze generously over the top of each kielbasa bite, ensuring the pineapple also gets coated for maximum flavor during baking.
- Bake: Bake in the preheated oven for 15–18 minutes or until the kielbasa is heated through and the glaze is caramelized and slightly sticky.
- Optional broil: For an extra smoky and caramelized finish, broil the bites for 1–2 minutes at the end of baking, watching carefully to avoid burning.
- Garnish and serve: Remove from oven and sprinkle with chopped fresh parsley if desired. Serve warm with toothpicks for easy party snacking.
