Description

  • 16 oz coleslaw mix
  • 1 cup pineapple tidbits (drained, with 1 Tbsp juice reserved)

Dressing

  • 2 Tbsp vinegar
  • 1 Tbsp brown sugar
  • â…” cup mayonnaise
  • 1 Tbsp pineapple juice (reserved)
  • Black pepper to taste


Instructions

  1. Prepare the Dressing: In a large bowl, whisk together the vinegar, brown sugar, mayonnaise, reserved pineapple juice, and black pepper until smooth and well combined.
  2. Add the Ingredients: Add the pineapple tidbits, coleslaw mix, and chopped fresh cilantro if using into the dressing.
  3. Toss the Salad: Gently toss all the ingredients together until the coleslaw mix is evenly coated with the dressing and the pineapple and cilantro are well distributed.
  4. Chill and Serve: Cover the bowl and chill the coleslaw in the refrigerator for at least 15 minutes to allow flavors to meld before serving.
