Description

These Nut-Free Muesli Bars are a delicious and healthy snack option, perfect for those with nut allergies or looking for a wholesome treat. Packed with oats, seeds, dried fruits, and a touch of sweetness, these bars are easy to make and great for on-the-go snacking.

Dry Ingredients:

  • 2 cups rolled oats
  • 1 cup puffed rice cereal
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots (chopped)
  • 1/2 cup sunflower seeds
  • 1/4 cup shredded coconut (unsweetened)
  • 1/4 cup pumpkin seeds

Wet Ingredients:

  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch of salt


Instructions

  1. Prepare the Pan: Line an 8×8-inch pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine oats, puffed rice, cranberries, chopped apricots, sunflower seeds, coconut, and pumpkin seeds.
  3. Prepare Wet Mixture: In a saucepan over medium heat, combine honey/maple syrup, coconut oil, cinnamon, vanilla, and salt. Stir until melted and combined.
  4. Combine and Chill: Pour the wet mixture over dry ingredients, mix well, transfer to the pan, press down firmly, and refrigerate for at least 2 hours.
  5. Cut and Store: Once set, cut into bars and store in an airtight container in the fridge.
