Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1 cup mini chocolate chips
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
Wet Ingredients
- 3/4 cup whole milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon mint extract
- 2-4 drops mint green food coloring
Ganache Topping
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
- 1/4 cup mini chocolate chips (for garnish)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C). Spray a 6-cavity donut pan with non-stick baking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and kosher salt until evenly combined.
- Combine Wet Ingredients: In another large bowl, whisk together the whole milk, eggs, melted unsalted butter, mint extract, and green food coloring until fully incorporated.
- Combine Wet and Dry: Gradually add the dry ingredients into the wet ingredients, whisking continuously until the batter is smooth and well combined.
- Fold in Mini Chocolate Chips: Gently fold in the mini chocolate chips to evenly distribute them throughout the batter without overmixing.
- Fill Donut Pan: Transfer the batter into a disposable piping bag. Cut off the tip and carefully pipe batter evenly into the prepared donut cavities, filling each about 3/4 full.
- Bake Donuts: Bake the donuts in the preheated oven for 10-12 minutes or until they are slightly golden brown and a toothpick inserted into the donut comes out clean.
- Cool Donuts: Remove the donuts from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare Chocolate Ganache: In a small saucepan, heat the heavy whipping cream over medium heat until it just begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth and glossy.
- Glaze Donuts: Dip the top of each cooled donut into the warm chocolate ganache, then sprinkle with mini chocolate chips as garnish. Allow glaze to set before serving.
Notes
- If mini chocolate chips are unavailable for the batter or topping, regular chocolate chips chopped into small pieces can be substituted.
- Adjust mint extract to taste; start with less if you prefer a milder mint flavor.
- Donuts are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days.
- For a dairy-free version, substitute milk and heavy cream with appropriate plant-based alternatives and use vegan butter.
