Description

These Mint Chocolate Brownies combine rich, fudgy chocolate with a refreshing mint frosting, creating a delightful treat perfect for any occasion. Featuring a dense chocolate base, a creamy mint layer, and a smooth chocolate ganache topping, they offer a satisfying balance of flavors and textures.

Ingredients

Scale

Brownie Base

  • 4 ounces unsweetened baking chocolate
  • 1 cup unsalted butter
  • 4 large eggs
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder

Mint Frosting

  • 1 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 3 tablespoons milk
  • 1 1/2 teaspoon peppermint extract
  • 4 drops green food coloring

Chocolate Ganache

  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 1/4 teaspoon mint extract

Instructions

  1. Prepare the Brownie Base: Preheat your oven to 350°F (175°C). Melt the unsweetened baking chocolate and 1 cup unsalted butter together in a heatproof bowl over simmering water or in the microwave, stirring until smooth. In a separate large bowl, beat the eggs, granulated sugar, and vanilla extract until light and fluffy. Gradually add the melted chocolate and butter mixture into the egg mixture, combining thoroughly. In a separate bowl, sift together the all-purpose flour and baking powder, then gently fold into the wet ingredients until just combined. Pour the batter evenly into a greased 9×13 inch baking dish.
  2. Bake the Brownies: Place the baking dish in the preheated oven and bake for approximately 30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and allow the brownies to cool completely in the pan on a wire rack.
  3. Prepare the Mint Frosting and Ganache: For the frosting, beat the softened butter until creamy, then gradually add powdered sugar, milk, peppermint extract, and green food coloring. Mix until smooth and spreadable. Once the brownies have cooled, evenly spread the mint frosting over the surface. Next, to make the ganache, heat the heavy cream, butter, and mint extract in a small saucepan until just simmering. Pour the hot cream mixture over the semi-sweet chocolate chips in a bowl and let sit for a minute before stirring until smooth and glossy. Pour the ganache over the frosted brownies and spread to cover evenly. Allow the ganache to set before slicing into 24 brownies and serving.

Notes

  • Make sure the brownies are completely cooled before applying the mint frosting to prevent it from melting.
  • Use high-quality chocolate for the best flavor.
  • The mint extract in the ganache is optional but enhances the mint flavor.
  • Store brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • The green food coloring is purely for visual effect and can be omitted or replaced with a natural color if preferred.
