  1. Sauté spinach and tomatoes: Heat olive oil in a skillet over medium heat. Add fresh spinach and halved cherry tomatoes, sautéing for 3 to 4 minutes until the spinach is wilted and the tomatoes are tender. Season with salt and black pepper to taste.
  2. Prepare bread slices: Butter one side of each slice of rustic or sourdough bread fully, ensuring even coverage for a crispy, golden crust when grilled.
  3. Assemble the sandwich: Place the bread slices butter-side down. On the unbuttered side of two slices, layer shredded mozzarella cheese evenly, then spread the sautéed spinach and tomato mixture, followed by crumbled feta cheese. Add sliced Kalamata olives if using for an extra burst of flavor.
  4. Complete the sandwich: Top each sandwich with the remaining bread slices, butter-side facing out to ensure a crispy exterior.
