  • 1 lb / 500g beef mince (ground beef)
  • 1 onion, grated (brown, white or yellow)
  • 2 small carrots, grated
  • 2 eggs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup tomato ketchup (or tomato sauce)
  • 1 cup panko (or breadcrumbs)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • Pepper, to taste

Mashed Potato Topping

  • 2 large or 3 medium potatoes
  • 1 tbsp butter (optional)
  • 1/2 – 1 cup milk
  • Tomato ketchup or sauce, for drizzling
  • Parsley, finely chopped (optional, for garnish)


Instructions

  1. Prepare the Meatloaf Mixture: In a large bowl, combine the beef mince, grated onion, grated carrots, eggs, grated parmesan cheese, tomato ketchup, panko breadcrumbs, garlic powder, dried oregano, dried thyme, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Shape and Bake Meatloaf Cupcakes: Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners. Divide the meatloaf mixture evenly into 8 portions and press each portion firmly into the muffin tin cups, shaping them like cupcakes. Bake for 20-25 minutes or until the meat is cooked through and has a slight crust on top.
  3. Make the Mashed Potato Topping: While the meatloaf cooks, peel and chop the potatoes into even chunks. Boil them in salted water until tender, about 15 minutes. Drain well and mash the potatoes with butter and milk until smooth and creamy. Adjust milk quantity for desired consistency and season with salt to taste.
