Description

These Meatball Monster Sandwiches are a fun and tasty twist on a classic favorite. Juicy meatballs smothered in marinara sauce, topped with melted cheese, and adorned with ‘monster eyes’ made of olives and cheese circles. Perfect for Halloween or any party!


Ingredients

For Meatballs:

1 lb ground beef, 1/2 lb ground Italian sausage, 1/3 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 cup milk, 1 large egg, 2 cloves garlic (minced), 1 teaspoon Italian seasoning, 1/2 teaspoon onion powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper.

For Assembly:

2 cups marinara sauce, 6 sub rolls or hoagie buns, 1 1/2 cups shredded mozzarella cheese, 1/2 cup sliced black olives (for eyes), sliced provolone or mozzarella circles (for eyes), fresh parsley or basil for garnish (optional)


Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C).
  2. Prepare meatballs: Combine all meatball ingredients in a bowl, form into meatballs, and bake for 18–20 minutes.
  3. Simmer sauce: Warm marinara sauce and simmer cooked meatballs in it for 5 minutes.
  4. Assemble sandwiches: Fill rolls with meatballs, sauce, and mozzarella. Broil until cheese melts.
  5. Add eyes: Top sandwiches with cheese circles and olives to make ‘monster eyes.’
  6. Garnish and serve: Garnish with parsley or basil and serve hot.

Notes

  • For spicier sandwiches, use hot Italian sausage or add red pepper flakes.
