Description

  • ½ cup whole milk (warmed)

Meatball Mushroom Stew:

  • ¼ cup breadcrumbs
  • 1 egg
  • 2 tablespoons grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 oz cremini or white mushrooms (sliced)
  • 1 small yellow onion (diced)
  • 1 tablespoon tomato paste
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh thyme (or ½ tsp dried)
  • Chopped fresh parsley (for garnish)


Instructions

  1. Mashed Potatoes: Bring a large pot of salted water to a boil. Cook potatoes until fork-tender, then mash with butter and milk. Season with salt and pepper.
  2. Meatballs: Combine beef, breadcrumbs, egg, Parmesan, garlic, oregano, salt, and pepper. Shape into meatballs and brown in a skillet. Set aside.
  3. Mushroom Stew: In the same skillet, cook mushrooms and onion. Add tomato paste, flour, broth, Worcestershire sauce, and thyme. Return meatballs to the skillet and simmer.
  4. Serve the stew over mashed potatoes and garnish with parsley.

  • For creamier mashed potatoes, use half-and-half instead of milk.
