Mushrooms & Marinade Base

  • 2 lbs fresh mushrooms (quartered, halved, or whole if small)
  • 16 cups water
  • 3 Tbsp white vinegar
  • 1/2 cup white vinegar
  • 2 tsp salt
  • 1 tsp sugar

Flavorings & Herbs

  • 3 garlic cloves, chopped
  • 2-3 bay leaves
  • 1/2 tsp freshly ground black pepper
  • 1 red pepper, chopped
  • 1 1/2 Tbsp dill weed (fresh, frozen, or dry)

Finishing

  • 2 cups water
  • 1/2 cup vegetable oil


Instructions

  1. Prepare the Mushrooms: Clean the mushrooms thoroughly by wiping them with a damp cloth or rinsing briefly in cool water and draining well. Quarter or halve larger mushrooms; small mushrooms can be left whole.
  2. Blanch Mushrooms: Bring 16 cups of water combined with 3 tablespoons of vinegar to a boil in a large pot. Add the mushrooms and blanch them for approximately 2-3 minutes until slightly tender but still firm. Drain and set aside.
  3. Make the Marinade: In a clean pot, combine 1/2 cup white vinegar, 2 tsp salt, 1 tsp sugar, chopped garlic, bay leaves, freshly ground pepper, red pepper, and dill weed. Add 2 cups of water and bring the mixture to a gentle boil, stirring until sugar and salt dissolve.
  4. Combine Mushrooms and Marinade: Add the blanched mushrooms to the hot marinade and cook together over low heat for about 10-15 minutes so the flavors meld and mushrooms absorb the marinade.
  5. Add Oil and Cool: Remove from heat and stir in 1/2 cup vegetable oil. Let the mushrooms cool completely in the marinade to allow the flavors to penetrate deeply.
  6. Marinate: Transfer the mushrooms and marinade into a sealed container or jar and refrigerate for at least 24 hours before serving to maximize flavor development.
