Ingredients
Scale
Produce
- 2 lb cherry tomatoes
- 1/2 bunch parsley (about 1/2 cup finely chopped)
- 2 large garlic cloves, minced
Condiments
- 1 1/2 cups light Italian dressing
Instructions
- Prepare Tomatoes: Rinse the cherry tomatoes under cold water and cut each tomato in half to maximize flavor absorption during marination.
- Combine Ingredients: Place the halved tomatoes into a glass mixing bowl or a quart-sized glass jar with a lid. Add the finely chopped parsley and minced garlic. Pour 1 1/2 to 2 cups of light Italian dressing over the tomatoes, just enough to barely cover them.
- Marinate: Stir gently to combine all ingredients. Cover the bowl or jar and let the mixture sit at room temperature for at least 2 to 4 hours to allow flavors to meld. Alternatively, refrigerate overnight for a deeper marinated taste.
Notes
- For best results, use fresh, ripe cherry tomatoes.
- If you prefer a stronger garlic flavor, you can increase the garlic quantity to 3 cloves.
- This recipe can be prepared a day in advance; flavors improve with longer marination time.
- Use a light Italian dressing to keep the dish fresh and not too heavy.
- Keep refrigerated if marinating overnight and serve chilled or at room temperature.
