Glaze

  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup

Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 375°F (190°C) and lightly grease a baking dish or use an oven-safe skillet. Using a sharp knife, create a deep pocket on the side of each chicken breast without cutting all the way through. Season both sides of the chicken with salt, black pepper, garlic powder, and dried thyme.
  2. Stuff the Chicken: Insert a few slices of Brie cheese and thin apple slices into the pocket of each chicken breast. Secure the opening with toothpicks if necessary to keep the filling inside during cooking.
  3. Make the Glaze: In a small bowl, whisk together Dijon mustard, maple syrup, and apple cider vinegar until smooth and well combined.
  4. Sear the Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, sear the stuffed chicken breasts for 2 to 3 minutes on each side until they develop a golden brown crust.
  5. Glaze and Bake: Brush the maple mustard glaze over the seared chicken breasts. Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
