Ingredients
Scale
Oatmeal Base
- 1 Tbsp unsalted Butter
- 1 cup steel cut oats (dry, un-rinsed)
- 3 cups boiling water
- 1/2 cup whole milk
- 1/2 cup low-fat buttermilk
- 1/4 tsp salt
Flavorings and Toppings
- 1 Tbsp maple syrup (plus more to taste)
- 1/4 tsp cinnamon (plus more to taste)
- 2 cups fresh fruit or berries (such as sliced peaches and raspberries)
Instructions
- Toast the oats: Set a medium saucepan over medium heat. Melt 1 tablespoon of unsalted butter then add 1 cup of steel cut oats. Toast the oats by stirring occasionally for about 2 minutes until fragrant.
- Simmer the oats: Pour in 3 cups of boiling water. Reduce the heat to a simmer, cover the saucepan, and cook on low heat for 20 minutes without stirring to allow the oats to absorb the water and soften.
- Add milk and cook further: Combine 1/2 cup whole milk with 1/2 cup buttermilk. Pour this mixture over the oatmeal along with 1/4 teaspoon salt. Stir gently just until incorporated, then continue cooking uncovered for another 10 minutes, stirring gently once or twice. Avoid over mixing to maintain texture.
- Flavor and serve: Stir in 1/4 teaspoon cinnamon and 1 tablespoon maple syrup, adjusting sweetness to taste. Divide the oatmeal evenly into 4 bowls. Top each serving with about 1/2 cup of fresh fruit or berries, and if desired, add an extra sprinkle of cinnamon and a drizzle of maple syrup for garnish and added flavor.
Notes
- Using steel cut oats gives a chewy texture and nutty flavor, but you can substitute with rolled oats for a softer texture, adjusting cooking time accordingly.
- To enhance creaminess, you can replace the whole milk and buttermilk blend with all whole milk or cream if preferred.
- Maple syrup amount can be adjusted to taste or swapped with honey as a sweetener alternative.
- Fresh seasonal fruits work best as toppings; try apples, berries, or bananas depending on availability.
- Toast the oats carefully to avoid burning and to bring out a richer flavor.
