  • 1 pound ground beef

  • 1 (16-oz) jar salsa

  • 1 (12-oz) bag corn chips
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (8.5-oz) can corn, drained
  • 1 small can sliced black olives, drained
  • 1.5 cups shredded Mexican cheese blend
  • 1 Roma tomato, diced
  • 1 small red onion, diced
  • 1 jalapeno, thinly sliced
  • 1 handful fresh cilantro
  • Sour cream, for serving


Instructions

  1. Prep: Heat the oven to 400°F (200°C). Line a baking sheet with aluminum foil and spray it with nonstick cooking spray to prevent sticking.
  2. Brown beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease if desired. Stir in the taco seasoning and salsa until the beef is fully coated and heated through.
  3. Assemble: Spread the corn chips in a single layer on the prepared baking sheet. Evenly distribute the ground beef mixture over the chips, then add black beans, corn, sliced olives, and sprinkle the shredded Mexican cheese blend on top.
  4. Bake: Place the baking sheet into the preheated oven and bake for about 5 to 6 minutes until everything is heated through and the cheese has fully melted.
