Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and ground cinnamon if using. Add the melted butter and stir until the mixture resembles wet sand. Press firmly into the bottom of a 9×9-inch or 9×13-inch baking dish to form an even layer. Bake for 8-10 minutes until golden brown. Allow it to cool while preparing the filling.
- Make the Filling: In a large bowl, whisk together sweetened condensed milk, fresh key lime juice, egg yolks, and vanilla extract until smooth and fully combined. Pour this filling evenly over the cooled crust. Bake at 350°F for 15-20 minutes until the filling is set and the edges are lightly golden. The center should still have a slight jiggle but will firm up as it cools.
- Cool and Chill: Let the bars cool at room temperature for 30 minutes to set slightly. Then refrigerate for 2-3 hours to fully set and chill thoroughly.
- Prepare the Whipped Cream Topping (Optional): In a chilled bowl, beat the heavy cream using an electric mixer until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to beat until stiff peaks form. Spread or pipe the whipped cream over the chilled bars. Garnish with lime zest or lime slices if desired.
