Ingredients
Scale
Ingredients
- 1 tablespoon olive oil
- 1 pound thinly sliced roast beef
- 1 medium green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1 cup sliced mushrooms
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 slices provolone cheese
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to get it ready for baking the roll ups.
- Heat the olive oil: In a large skillet over medium heat, add 1 tablespoon of olive oil to begin sautéing the vegetables.
- Sauté the vegetables: Add the thinly sliced green bell pepper, onion, and mushrooms to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Add the roast beef and seasonings: Add the thinly sliced roast beef to the skillet with the vegetables. Sprinkle garlic powder, salt, and pepper over the mixture. Stir and cook for another 3-5 minutes until the beef is warmed through and the vegetables are tender.
- Prepare cheese slices: Lay out the 8 slices of provolone cheese flat on a clean surface, ready for filling.
- Assemble the roll ups: Place an even portion of the beef and vegetable mixture on top of each provolone slice.
- Roll and place in baking dish: Carefully roll each provolone slice tightly around the filling. Arrange each roll-up seam-side down in a baking dish to keep them intact during baking.
- Bake the roll ups: Place the dish in the preheated oven and bake for about 10 minutes or until the cheese has melted and is bubbly.
- Serve: Remove from the oven and let the roll ups cool for a few minutes before serving to enjoy the flavors best.
Notes
- Use thinly sliced roast beef for easy rolling and even heating.
- Feel free to substitute provolone with mozzarella or another cheese that melts well.
- For spicier roll ups, add a pinch of red pepper flakes when sautéing the beef and vegetables.
- These roll ups can be served as an appetizer or a satisfying low-carb main dish.
- Leftovers can be refrigerated and reheated gently in the oven or microwave.
