Description

A vibrant and spicy Jalapeño Chicken with Bell Peppers stir-fry that combines tender chicken pieces with colorful bell peppers and jalapeños, all infused with zesty lime juice and aromatic spices. Perfect for a quick, healthy, and gluten-free Mexican-inspired main course.

Ingredients

Scale

Chicken

  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil

Vegetables & Aromatics

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 jalapeños, thinly sliced (remove seeds for less heat)
  • 3 garlic cloves, minced

Seasonings & Sauces

  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Garnish

  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5 to 7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté the vegetables: In the same skillet, add the sliced red, yellow, and green bell peppers along with the sliced jalapeños. Sauté for 4 to 5 minutes until the peppers are slightly tender but still vibrant.
  3. Add garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, ensuring the garlic does not burn.
  4. Combine and season: Return the cooked chicken to the skillet. Stir in soy sauce, lime juice, ground cumin, chili powder, salt, and black pepper. Cook for an additional 2 to 3 minutes, allowing the flavors to meld together.
  5. Serve: Garnish with fresh cilantro if desired and serve the dish warm. It pairs wonderfully with rice, quinoa, or cauliflower rice for a low-carb option.

Notes

  • For a spicier version, leave the jalapeño seeds in or add a pinch of crushed red pepper flakes.
  • This dish pairs well with rice, quinoa, or cauliflower rice for a low-carb option.
  • Use gluten-free soy sauce to maintain the gluten-free status.
  • Adjust the amount of jalapeños based on your preferred spice level.
