  • 4 cups powdered sugar

  • 2 tablespoons strawberry puree
  • 1–2 tablespoons heavy cream or milk

Optional Garnish:

Instructions

  1. Preheat oven and prepare pans: Preheat oven to 350°F and grease and flour three 8-inch round cake pans or two 9-inch pans.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Prepare batter: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in lemon zest, lemon juice, and vanilla. Gradually add dry ingredients and buttermilk, alternating, and fold in strawberry puree.
  4. Bake: Divide batter among pans, bake for 25-30 minutes, then cool on wire racks.
  5. Make frosting: Beat butter, add powdered sugar, lemon juice, strawberry puree, and salt. Frost cake layers.
  6. Garnish: Decorate with fresh strawberries and lemon slices if desired.
