Scale
Main Batter Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Cinnamon Swirl Ingredients
- 1/3 cup sugar
- 1 tbsp cinnamon
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly to prevent sticking.
- Mix Wet Ingredients: In a medium bowl, combine the mashed bananas, melted butter, sugar, egg, and vanilla extract until well blended.
- Add Dry Ingredients: Stir in the baking soda and salt, then gradually incorporate the all-purpose flour until the batter is just combined, being careful not to overmix.
- Layer Batter and Cinnamon Swirl: Pour half of the batter into the greased loaf pan. In a small bowl, mix together the cinnamon and sugar to create the swirl mixture, then sprinkle half of it evenly over the batter.
- Finish Layering and Swirling: Add the remaining batter on top, followed by the rest of the cinnamon-sugar mixture. Use a knife to gently swirl the cinnamon mixture through the batter for a beautiful marbled effect.
- Bake and Cool: Bake the bread in the preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan before slicing and serving.
Notes
- For extra moisture, use very ripe bananas with plenty of brown spots.
- Ensure not to overmix the batter to keep the bread tender and light.
- You can add nuts like walnuts or pecans for a crunchy texture.
- Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Reheat slices in the microwave or toaster oven for a warm treat.
