Instructions
- Prepare the rice: Cook the brown rice according to package directions, substituting water with vegetable broth and adding 3 cloves of minced garlic for extra flavor. Once cooked, set aside.
- Sauté aromatics and herbs: In a large skillet, melt the vegan butter over medium-low heat. Add the chopped onion and sauté until golden. Stir in the minced garlic along with the chopped parsley, thyme, and rosemary, cooking a few more minutes until fragrant.
- Sear vegan chicken: Add the vegan chicken to the skillet and sear on all sides until golden brown. Remove from the skillet and set aside.
- Make the herbed sauce: In the same skillet, sprinkle the flour and stir to combine with the fat. Cook for a few minutes while stirring. Gradually pour in the vegetable broth, stirring constantly and bringing to a simmer until the sauce thickens.
- Combine vegetables and rice: Stir the chopped broccoli and cooked brown rice into the thickened sauce, mixing thoroughly to combine all ingredients evenly.
