- Prepare the Eyeballs: Drain the canned lychee fruits thoroughly. Insert one blueberry or maraschino cherry into the hollow center of each lychee to create the eyeball effect.
- Dissolve the Jello: Boil 1 cup of water. Stir the red Jello powder into the boiling water until fully dissolved.
- Add Unflavored Gelatin (Optional): If using for a firmer texture, dissolve the unflavored gelatin packet in 2 tablespoons of cold water, then stir it into the hot Jello mixture until completely dissolved.
- Mix in Alcohol: Add 1 cup of vodka (or a mix of ½ cup vodka and ½ cup cold water) to the gelatin mixture. Stir well to combine evenly.
- Cool the Mixture: Allow the Jello mixture to cool slightly, which prevents cooking or damaging the fruit when added.
- Assemble Shots: Place one prepared lychee ‘eyeball’ into each plastic shot cup. Carefully pour the cooled Jello mixture over the eyeball.
- Chill to Set: Refrigerate the filled shot cups for at least 4 hours or until the gelatin is fully set and firm.
