Description

Teriyaki Sauce

  • ¼ cup soy sauce
  • 3 tbsp brown sugar
  • 1 cup water, divided
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp cornstarch
  • 1 tbsp orange zest

Stir Fry

  • 1 lb ground turkey
  • 2 tsp sesame oil
  • 3 cups broccoli florets (fresh or frozen)
  • 1 small onion, diced
  • 1 cup shredded carrots
  • Salt & pepper to taste


Instructions

  1. Make the sauce: In a saucepan, combine soy sauce, brown sugar, ¾ cup water, honey, minced garlic, grated ginger, and orange zest. Bring the mixture to a simmer.
  2. Thicken the sauce: In a small bowl, mix cornstarch with the remaining ¼ cup water until smooth, then whisk it into the simmering sauce. Continue to simmer until the sauce thickens. Remove from heat and set aside.
  3. Cook the aromatics: In a large skillet or wok, heat sesame oil over medium-high heat. Add diced onion and cook until translucent, about 3-4 minutes.
  4. Brown the turkey: Add ground turkey to the skillet. Season with salt and pepper, and cook until browned and cooked through, breaking it apart as it cooks.
  5. Add vegetables: Stir in broccoli florets and shredded carrots. Cook until the vegetables are tender, covering the skillet briefly if using fresh broccoli to help steam them, approximately 5-7 minutes.
  6. Combine with sauce: Pour the prepared teriyaki sauce over the stir fry and toss well to coat all ingredients evenly. Simmer together for 2–3 minutes to heat through and allow flavors to meld.
  7. Serve: Spoon the stir fry over cooked rice or noodles. Optionally, garnish with sesame seeds or chopped green onions for added texture and flavor.

Notes

  • For a gluten-free version, use tamari instead of soy sauce.
  • Adjust sweetness by varying the amount of brown sugar and honey to your taste.
  • This dish reheats well and can be stored in the fridge for up to 3 days.
  • Fresh ginger can be substituted with ½ tsp ground ginger in a pinch, but fresh is preferred for better flavor.
  • Optional toppings like sesame seeds or green onions add a nice finishing touch but are not required.
