Ingredients
Scale
Main Ingredients
- 1 pound ground turkey
- 2 cups diced sweet potatoes (about 1 large sweet potato)
- 1 (15 ounce) can black beans, drained and rinsed
- 1 teaspoon kosher salt
- 1 teaspoon chipotle chili powder
- 1 teaspoon cumin
- 1 cup cheddar cheese, shredded
- 3 green onions, sliced
- 1 tomato, diced
Sauce Ingredients
- 1/3 cup sour cream
- 1/3 cup salsa
Instructions
- Prepare Sweet Potatoes: Add diced sweet potatoes to a microwave-safe plate and cover with a damp paper towel. Microwave on high for 5 minutes until just tender. Carefully remove and set aside until ready to use.
- Make the Sauce: In a small bowl, combine the sour cream and salsa. Mix well and set aside to serve alongside the skillet.
- Cook Ground Turkey: Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, for about 5 minutes until mostly cooked through with a slight hint of pink. Drain excess liquid from the skillet if necessary.
- Combine and Simmer: Add the microwaved sweet potatoes, black beans, kosher salt, chipotle chili powder, and cumin to the skillet. Stir well to combine and cook for another 5 minutes, stirring occasionally, until the sweet potatoes are soft and the turkey is fully cooked.
- Add Cheese and Garnish: Remove the skillet from heat and sprinkle the shredded cheddar cheese over the top. Allow it a couple of minutes to melt. Finally, top with sliced green onions, diced tomatoes, and dollops of the prepared salsa-sour cream sauce. Serve immediately for a warm, satisfying meal.
Notes
- You can substitute ground chicken or lean beef for the turkey if preferred.
- If you do not have a microwave, sweet potatoes can be boiled or roasted until tender before adding to the skillet.
- Adjust the chipotle chili powder amount to control the heat level to your taste.
- For a dairy-free version, replace sour cream and cheddar cheese with vegan alternatives.
- This dish pairs well with a side of rice or a fresh green salad for added fiber.
