- 1 small seedless watermelon, cut into 1-inch slices
- 1 tbsp olive oil

- 2 cups arugula or mixed greens
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped toasted walnuts or pecans
- Fresh basil or mint leaves, torn
Balsamic Reduction
- 1/4 cup balsamic vinegar
- 1 tbsp brown sugar
Instructions
- Preheat Grill: Preheat the grill to medium-high heat around 400°F to ensure it’s hot enough for grilling the watermelon slices and achieving nice char marks.
- Prepare Watermelon: Brush the watermelon slices lightly with olive oil and season with salt and freshly cracked pepper to enhance the flavors and prevent sticking on the grill.
- Grill Watermelon: Place the watermelon slices on the grill and cook for 2–3 minutes per side until distinct grill marks appear and the watermelon gets slightly caramelized. Remove and let cool slightly, then cut into cubes.
- Make Balsamic Reduction: In a small saucepan, combine balsamic vinegar and brown sugar. Simmer over medium heat for 6–8 minutes, stirring occasionally, until the mixture has reduced by half and is syrupy in consistency.
- Assemble Salad: Arrange arugula or mixed greens on a serving platter or individual plates, then evenly top with the grilled watermelon cubes.
- Add Toppings: Sprinkle the salad with crumbled feta cheese, toasted chopped walnuts or pecans, and torn fresh basil or mint leaves for a burst of freshness and crunch.
- Drizzle and Serve: Drizzle the balsamic reduction over the entire salad just before serving for a perfect balance of sweet, tangy, and smoky flavors.
