- 1 red bell pepper, sliced
- 1 red onion, sliced
- 8 ounces fresh spinach
- 1 cup cherry tomatoes, halved

- 1 cup shredded mozzarella cheese

- 4 large whole wheat tortillas
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Preheat Grill: Preheat the grill to medium heat to prepare for grilling the vegetables and quesadillas.
- Season Vegetables: In a large bowl, combine zucchini, red bell pepper, and red onion. Drizzle with olive oil and season with salt, pepper, oregano, and basil. Toss well to coat all the vegetables evenly with the seasoning.
- Grill Vegetables: Place the seasoned vegetables directly on the grill and cook for 5-7 minutes until tender and nicely marked by the grill. Remove and set aside.
- Sauté Spinach and Garlic: Heat a little olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted. Remove from heat.
- Assemble Quesadillas: Lay tortillas flat and layer half of each tortilla with grilled vegetables, wilted spinach, cherry tomatoes, feta, and mozzarella. Fold tortillas in half to cover the filling.
- Grill Quesadillas: Place quesadillas on the grill and cook 3-4 minutes per side, or until tortillas are golden brown and cheese has melted completely.
- Serve: Remove quesadillas from grill, let cool slightly, then cut into wedges. Serve warm for a delicious Mediterranean-inspired meal.
